The World Champion Butcher Apprentice competition brings together the industry's most promising apprentices to compete on the world's biggest stage.

Designed to recognise technical excellence, craftsmanship and potential, the competition provides a unique opportunity for apprentices to test their skills against the world's best emerging talent while gaining invaluable international experience.

About the Competition

The Future of Butchery Starts Here


The World Champion Butcher Apprentice competition is designed to showcase the next generation of butchers, providing a global platform for apprentices to demonstrate their technical ability, creativity and professionalism in a high-performance environment.

Competitors have 2 hours and 30 minutes to transform a beef rump on the bone, side of lamb, loin of pork and two chickens into a themed display featuring both compulsory products and their own value-added creations.


Eligibility

To enter the World Champion Butcher Apprentice competition, entrants must:

  • Be enrolled with a registered training provider as of the official eligibility date outlined in the competition rules.

  • Where no formal apprenticeship programme exists in their country, provide independent evidence of butcher training in accordance with the competition guidelines.

  • Typically be nominated or selected through their national competition or recognised industry body.


Competition Format

HOW IT WORKS

Each competitor will receive:

  • Beef rump (bone-in)

  • Side of lamb

  • Loin of pork (belly on, bone in)

  • Two whole chickens

Within the allocated 2 hours and 30 minutes, competitors must prepare a professional themed display showcasing exceptional knife skills, product utilisation, value adding and presentation.


Judging

Judged by International Industry Experts

Competitors are assessed against internationally recognised World Butchers' Challenge judging standards across:

  • Personal hygiene

  • Knives and equipment

  • Safety

  • Knife and rolling skills

  • Primal utilisation and value adding

  • Speed and efficiency

  • Health and safety

  • Creativity and innovation

  • Display presentation

  • Saleability

  • Cookability

Judging is based on three key areas:

  • Individual Assessment (15%)

  • Technical Assessment (35%)

  • Product & Display Assessment (50%)


Entry Fees & Deadlines

ENTRY FEE

AUD $2000 per individual

PAYMENT SCHEDULE

To confirm your place in the 2028 World Butchers’ Challenge, entry fees are payable in three instalments across the lead-up to the event.

  • 25% deposit due by 31 September 2026

  • 50% instalment due by December 31 2026

  • Final 25% balance due by 31 July 2027

Important: Entry is only confirmed once the initial 25% deposit has been received.
